(I don't know what my face was doing in that pic, but with me standing there it give you an idea of how big some of these pumpkins are!)
Italian Bow Tie Soup:
1 package of Italian sausage (I think it is about 1/2-1 lb I like the Jimmy Dean kind)
1 small can of tomato paste
2 tsp dried oregano
2 tsp dried basil
1 tsp Worcestershire sauce
1/2 yellow onion chopped
2 cloves garlic crushed
4-5 Cans beef broth
2 large carrots peeled and chopped
1 small zucchini sliced and quartered
1 can green beans
1 head broccoli crown chopped into small florets
Salt and Pepper to taste
Start cooking the Italian sausage in the bottom of your pot when the sausage is about half way cooked and onion and garlic to the meat. Then add your tomato paste and spices and you will almost create a base for a spaghetti sauce. When sausage is fully cooked you will then add your cans of beef broth. To the liquid add your carrots first because they will take the longest to cook. Once the liquid is boiling immediately add your noodles. when noodles are almost cooked to al-dente add your broccoli and zucchini and very last the green beans. Top the soup off with some Parmesan cheese and some garlic bread goes great with the soup.
